• 4 X 200g Firm Tofu Slices
• ¼ cup extra virgin olive oil
• 2 tablespoons red wine vinegar
• 2 tablespoons wholegrain mustard
• 1 teaspoon paprika
• 2 shallots, finely chopped
• ¼ cup finely chopped parsley
• 2 tablespoons chopped fresh chives
• 250g punnet roma tomatoes, halved lengthways
• Rocket, Cucumber, Red Onion, finely chopped
ASFIT4Life Real Easy Method
1.Heat a barbeque grill plate over a medium to high heat. Add tofu. Cook each side, for 5 minutes.
2.Make dressing: whisk oil, vinegar, mustard, paprika, shallots and herbs in a medium bowl. Season with salt and pepper. Stir in tomatoes.
3.Cut tofu diagonally into thin slices. Place in a serving bowl with dressing. Toss well.
4.Layer rocket, cucumber, red onion,tofu, tomatoes on a plate. Garnish with fresh parsley.
