Chilli Tofu

ASFIT4Life Real Food Ingredients

4 X 200g tofu fillets

2 tablespoons extra virgin olive oil

2 cloves garlic, crushed

1 teaspoon dried chilli flakes

Pepper to taste

Tomato Sauce

3 tablespoons water

1 small onion, finely chopped

800g chopped tomatoes

250g punnet cherry tomatoes

½ cup water

1 tablespoon drained baby capers

½ cup torn fresh basil leaves

ASFIT4Life Real Easy Method

1.Heat water in a saucepan over a medium heat. Add onion and cook, stirring occasionally, until soft. Add canned tomatoes, cherry tomatoes, water and capers. Bring to the boil. Gently boil, stirring occasionally, for about 10 minutes, or until thickened.

2.Toss tofu in oil, garlic and chilli in a large bowl. Season with pepper.

3.Heat a large, non-stick frying pan over a medium to high heat. Add tofu. Cook for about 6 to 7 minutes on each side, or until cooked. Remove. Thickly slice.

4.To serve, reheat sauce. Stir in torn basic leaves. Top with tofu, rocket and small basil leaves.
