Chilli Con Legume

1 tablespoon olive oil

1 large onion, chopped

2 large red chillies, chopped

2 large green chillies, chopped

2 garlic cloves, crushed

600g cooked lentils

2 teaspoons dried chilli

1 teaspoon smoked paprika

1 teaspoon ground cumin

50g tomato paste (salt reduced)

400g diced tomatoes

1 cup water

410g cooked red kidney beans

½ cup fresh coriander

ASFIT4Life Real Easy Method

  1. Heat oil in a large frying pan over medium-high heat. Add onion, chilli and garlic and cook for minutes, stirring often until softened. Transfer to a bowl. Increase heat to medium-high, add lentils and cook, for 3-5 minutes.

  2. Stir in spices and tomato paste. Cook for 2 minutes. Add tomatoes, water and beans, stirring to combine. Reduce heat to medium-low and simmer for 10 minutes until thickened.

  3. Stir through coriander.
