• 2 tbsp lime juice
• 1 tsp cumin
• 1 tsp olive oil
• 2 tbsp freshly chopped parsley
• 375g cooked chickpeas

1.In a small bowl, combine lime juice, cumin, olive oil and parsley. Place chickpeas in a glass baking dish or in a resealable plastic bag. Add marinade. Cover and marinate in the refrigerator for 15 minutes.
2.Preheat oven to 350 degrees.
3.Divide chickpeas among lettuce cups. Add shredded vegetables, hommus and coriander for garnish.
