Low Fat Tuna, Lemon and Asparagus Pasta

This is one of the easiest, quickest, yummiest dishes you can make for the family. It is low in fat (especially if you don’t add the oil), has 1 serve DAIRY, 1 serve VEGETABLE, 2 serves PROTEIN, 1 serve CARBOHYDRATES.

Ingredients

375g dried large shell pasta (or gluten free)

2 bunches asparagus, trimmed into 2cm lengths

425g tuna in springwater, drained, flaked

150g fresh reduced fat ricotta cheese, crumbled

2 teaspoons lemon zest

1/4 cup lemon juice

1 teaspoon extra-virgin olive oil (optional)

Directions

  1. Cook pasta in a large saucepan of boiling water, following packed directions until tender. Add asparagus to pan for last minute. Drain. Return pasta and asparagus to pan.
  2. Add tuna, ricotta, lemon zest and lemon juice. Season with pepper. Serve drizzled with oil (optional).
